Matching fire and ice at Judy's Sichuan restaurant in Chesapeake-The Virginian-Pilot

I still remember the first time I ate Chinese food, although it was highly Americanized. In 1971, when I was 6 years old, my sister Brenda and I spent the summer in Washington, and she died in early November. Brenda is about 19 years older than me and is a flight attendant for United Airlines. When she talks about her trip to Rio and Rome, I like it.

I like that she takes me to Atlanta where I would not eat at home. One day, we strolled to Chinatown and walked into one of the many restaurants there. My order is sweet and sour pork and hot green tea. I feel as complicated as any first-year student.

I still like Chinese food. Judy’s Sichuan food is the best in our area. A store in Chesapeake opened in December 2017, and a store in the downtown area of ​​Virginia Beach has been open since 2012.

I have been visiting Judy's in the "Peake Eats" column for more than two years, and I would love to share the food I recently discovered here.

Eat: pork and green pepper

After eating some delicious vegetable dumplings, I ate a large plate of pork and green peppers. The dish is beautiful: a bunch of shredded peppers gleams and provides a platform for a large amount of thin slices of pork, thicker than a bunch of pasta, but not as long. Fresh slices of ginger garnished the offerings.

Have you ever tried shishito peppers? Are Japanese peppers grilled? Traditionally, 1 out of 10 peppers will set your mouth on fire. Well, the green chili flakes on my plate look a lot like shishito, but the fire ratio is much higher.

Please note that they are not scalded because the seeds and ribs have been removed. In fact, the taste is a bit green and fruity. But the heat is there-and it's very obvious in some slices.

The pork is salty and sweet, which is a good foil to the chili, and when one of the thin slices is placed on my fork, the ginger adds a bright pop.

My pork and green chili dishes are absolutely delicious. It presents a huge dichotomy between chewy chili flakes and soft pork flakes, as well as a wonderful contrast of color, taste, and calorie level.

Drink: Kirin Ichiban Japanese Beer

In order to extinguish some of the fire in my pork and green chili dishes, I chose ice. Or at least a cold beer.

Japanese beer is refined and suitable for a variety of Asian cuisines. My unicorn was placed in a tall frosty glass, it was a lovely medium amber, and it was crowned with a foam head.

The beer is very fresh, very smooth, and the hops are well balanced, bringing the slightest bitterness, but also accentuating the citrus flavor in the brewing.

From noon to 6 pm on November 21st, The Infinity Circle of the King's Daughters Children's Hospital will host Crocks For Kids. The event was held at Big Ugly Brewing.

Circle members will provide crockpot meals to sell and raise funds for CHKD. Look for products such as barbecue, chili, macaroni and cheese, and seafood gumbo. Live music adds luster to the event throughout the day.
