With the State Fair less than a month away, local restaurateurs with outposts at Rosedale Center’s Potluck food hall are once again putting their own twists on Fair fare.

As in previous years, the “Minnesota Fare” Fair-inspired specials will be available from the beginning of August until Labor Day, the final day of the State Fair — this year, Sept. 5.

Here’s what’s on this year’s menu:

Adam’s Soul To Go: Loaded nachos with beef ($10/$14) or pulled pork, carne asada, or chicken al pastor (for extra); Chicken-fried smoked ribs tossed in an “Asian style sticky barbecue sauce” ($12)

Betty & Earl’s Featuring Sweets by Diane: “Taste The Rainbow” cake jar with rainbow cake and Skittles ($11.99); “Death By Chocolate” cake jar with chocolate cake and candies ($11.99); “Peanut Butter Crush” with chocolate cake, Reese’s pieces, and Reese’s peanut butter cups ($11.99)

Burger Dive: Smashburger-stuffed cheese curds, served with pickles ($13)

Grand Ole Creamery: “American Pie Ice Cream” with strawberry/blueberry swirls and cheesecake bites (prices vary by size)

Joey Meatballs: Deep-fried meatball on a stick, with red sauce or Alfredo sauce ($5)

Smack Shack: Lobster ‘corn dogs’ with tarragon aioli ($19)

This isn’t Potluck’s first foray into themed specials, either: Besides the now-annual Minnesota Fare bites, the food hall’s vendors put their spins on Spam last summer for National Canned Luncheon Meat Day and teamed up for a two-month-long ranch dressing celebration earlier in 2021.
